What is Mojo Verde?
Mojo verde is a cold spicy sauce made from coriander, garlic, vinegar and oil. "Mojo" is a Spanish word derived from mojar, which means to soak. Verde is green in Spanish. Mojo Verde is a specialty from the Canary Islands. This dipping sauce is somewhat similar to Italian salsa verde.

What is mojo verde most often served with?
Mojo verde is often served with the Canarian specialty - patatas arrugadas (salt-crusted potatoes), along with mojo picón. But you can find it in a much wider range of recipes. It is traditionally served with grilled octopus, fish or grilled meat.
What are the variations of mojo verde?
Mojo verde can be prepared either in a mortar or in a food processor/blender. However, preparation in a mortar is not an easy job and takes a long time. We usually use a blender and often add some Green chili peppers to make it more spicy.
Recipe: Mojo verde - green spicy salsa
Preparation: 10 minutes
Ingredients:
- Serves 3
- 2 cloves of garlic - peeled
- 8 tablespoons of chopped green coriander
- 1 green chili pepper
- a teaspoon of cumin
- Salt
- 1 tablespoon of wine vinegar
- 50 ml extra virgin olive oil
Method:
- Place all the ingredients except the oil in a food processor. Blend into a fine paste. If larger pieces stick to the wall of the blender, you can add 2 tablespoons of water. However, you can leave the mixture with larger pieces, the result will be more rustic.

If your blender allows it, add a thin trickle of the olive oil to the mixture while the blender is still mixing. At the end, you should have a smooth emulsion.
