Papas arrugadas are a spectacular tapas that everyone likes. Potatoes coated in salt which can be dipped in a mojo verde ( coriander sauce ) and spicy mojo picón ( spicy red pepper sauce).
What are papas arrugadas?
Papas arrugadas are potatoes cooked in a highly salty brine and then baked for a while on a salted crust that remains on the bottom of the pot. This is a typical recipe from the Canary Islands.
What are the best potatoes?
Whole, small, new potatoes. They must have a thin skin and should not be larger than 5 cm. The recipe only works with whole unpeeled potatoes.
What are papas arrugadas served with?
They are most often served with a bowl of spicy mojo picón sauce, less often also with a green salsa mojo verde .

What to watch out for in the recipe?
Wash or brush the potatoes well so that they don't have even a bit of dirt. Observe the amount of water, do not cook potatoes in a pot full of water.

Ingredients:
The ingredients for papas arrugadas
- 500g small new potatoes
- 4 tablespoons of salt
- Mojo picón (recipe)
- Mojo verde (recipe)
Method:
- Clean the potatoes thoroughly from dirt. Do not peel them.

Add 4 spoons of salt, and potatoes into the pot. Then add just enough of cold water so that it covers the potatoes, do not overfill with water.
The potatoes must be just submerged - do not add too much water, as this will dilute the solution
- Cook for about 20 minutes. Check if they are soft with a fork.
- Drain most of the water from the pot. Leave only about 2 cm at the bottom.
- Let the water evaporate while cooking on a higher flame, but be careful not to let the potatoes stick to the bottom of the pot.

Once the water evaporates, there will be salt left at the bottom of the pot. Now reduce the flame to a minimum and while carefully stirring, gradually coat the potatoes in salt and watch them slowly shrink.
Carefully roll the potatoes on the salt bed - they will gradually shrink and "age"

Serve hot with mojo picón and mojo verde .
