Papas asadas con mojo, or baked potatoes with spicy sauces, are a popular tapas originally from the Canary Islands. Potatoes roasted in some olive oil are alternately dipped in mojo picón pepper or mojo verde coriander sauces.
What are the variants of the recipe?
Small new potatoes in their skins are ideal for this recipe. However, if you have large new potatoes, you can cut them into quarters and proceed in the same way. Sometimes chopped garlic is added at the beginning along with some flat-leaf parsley. At the end, you can cover the potatoes with a rich layer of freshly ground pepper.

Ingredients:
- 500 g small new unpeeled potatoes
- 2 tablespoons chopped flat-leaf parsley
- 100 ml of olive oil
- Salt
- Mojo picón (recipe)
- Mojo verde (recipe)

METHOD:
- Preheat the oven to 230C for at least 15 minutes before baking.
- Clean the potatoes thoroughly from dirt. Do not peel them.
- Place the potatoes on a baking sheet or a flat baking pan. Add plenty of salt and cover with olive oil using your hands.
- Check after 25 minutes. The potatoes should be tender when pierced with a fork and nicely browned. If you want to cook for more, bake for another 5 minutes.
- Mix with the chopped parsley.
- Serve hot with some mojo picón and mojo verde.
